Extra virgin olive oil can be substituted in nearly all dishes where margarine or butter is used for cooking, baking, grilling or sautéing. Use extra virgin olive oil in your recipes to cut down on cholesterol and saturated fats as it’s considered a good fat because it contains extra antioxidants including vitamin-E which will give your recipes a heart-healthy boost.

Our handy conversion chart is good for most cake and pastry recipes but keep in mind, that depending on the recipe it is not always a good idea to use a liquid shortening in place of a solid shortening or if the recipe requires a lot of creaming together of butter and sugar. If a recipe calls for vegetable or canola oil, you can substitute those oils with extra virgin olive oil, the swap would be a one-to-one ratio.
